This was lovely. We've made it a few times before - it's from Leith's Vegetarian Bible, which I highly recommend.
First I cut up some smoked tofu into triangles, coated it in olive oil and stuck it in the oven to cook

Whilst that was in the oven, I made a basic tomato sauce - fried up some onions and garlic 'til they were soft, then added a tin of chopped tomatoes and cooked it down a bit. Then I added a couple of handfuls of frozen peas, and a bit of chopped parsley (plus a little salt and pepper).

I took that off the heat and stuck some tagliatelle in boiling water. Once that was done I drained it, mixed it with a bit of the sauce and plated it up. Then I took the tofu out of the oven and added that to the remaining sauce, and served it on top of the pasta with a bit more chopped parsley. Done.
